Tropical Traditions CoconutWith the recent holidays, I knew I was going to have some baking to do.  I thought making a coconut cake would be a good idea for my husband and father.  For two people which have everything, it is hard to find them just the right gift.  This year, I chose to bake them a home-made coconut cake for their Christmas gift.  Santa must have known I was out of coconut. That same day, I received a package from Tropical Traditions with the shredded coconut I have been waiting for.  The cake turned out wonderful, and the reviews by the men were out of this world.  After that kind of reception, I decided to go through the sites’ recipes, and I chose to make macaroons, which were surprisingly easy to make and so yummy.  I have more baking to do, and with five boys in this house, they can put away some food.

The bucket the coconut comes in is great because it has a snug fit.  I believe the product will stay fresh longer, and you will be able to reuse it at a later time.  Being organic is always a plus in my book. It is also not sweetened with extra sugars which keeps it’s natural flavor.  The kids or the adults did not even notice.  I was a bit disappointed as the coconut was more on the granular side, but overall I enjoyed it and it was great for baking.  For people who don’t like long strands will like the granular.  There are three different styles the coconut comes in: shredded, flaked and chips.
